Every page appears to have a 301 redirect to it? Is it just me? I'm wondering what effect this will have on SEO - ideally page loads should return a 200 status, not a 301...

Are you sure it's on every page and not just an empty cart? Can you show screenshots of category or product pages?

Notice in your layouts you've got links with no forward slash at the end, then in the .htaccess by default it forces a forward slash. 301 redirect. Add slashes to your URLs and you should be good, or remove the redirect if it doesn't have any adverse affects. On SEO, I don't think it will.
